Thai Fish Cakes


  • 1lb/500gms white fleshed fish ( brim, snapper, flathead, redfish, tilapia, hoki ) skin and bones removed  * you could use frozen fish if necessary
  • 2 tablespoons coriander leaves chopped
  • 2 1/2 tablespoons Red curry paste 
  • Zest of half lemon 
  • 1 1/2 tablespoons fish sauce 
  • 1 egg
  • 8 Green beans finely sliced 
  • 2 tablespoons corn starch 
  • 2 tablespoons vegetable oil


Place fish, red curry paste, coriander, fish sauce, lemon zest and egg into a food processor. Process until the fish has minced and it looks like a paste. 

Transfer to a bowl and stir through corn starch and green beans, mix until corn starch is incorporated

Form 1 ½ inch x 1/3 inch patties
Brush patties with vegetable oil place into CRUX air fryer set at 390F for 12 minutes
once cooked they should be a deep golden brown in color.
 Remove from air fryer basket.

Serve with steamed rice and a little salad of crushed tomatoes, green beans and cucumber spears  

  • Quick dipping sauce
  • 2/3 cup sweet chili sauce
  • Juice of 1 lime
  • 1/3 cup diced cucumber
  • 2 tablespoons chopped cilantro

mix all ingredients together in a small serving bowl
